When I was on my dear friend Ritas food blog, I came across this "blueberry muffin recipe" and knew I had to bake it, I love blueberries and this recipe was absolutley amazing.
These muffins were soft, fluffy and moist with the jam of the beautiful fresh blueberries ouzing out of the muffins, all I can say Rita is WOW.
Thank you Rita for sharing this recipe as we will be using it everytime we fancy some blueberry muffins.
Rita is a very talented baker and is excellent at baking cakes and desserts and I am sure you will love her excellent recipes.

Generally I love top layer of muffins but with your miffins I will go with middle part ,looks yummmmmm Jeena
I luv all the gooey blueberries in the muffins..sweet and sour.
Hey Jeena, this looks good. Perhaps to make it even better, if it's to your preference, is to add a crumb topping on top of the muffins before it goes into the oven. I love this topping with any fruit muffin.
Here's the recipe for my crumb topping:
-5 tbsp packed brown sugar
-2 tbsp all-purpose flour
-1/4 tsp ground cinnamon
-3 tsp butter
Mix this all up in a bowl till it turns into a crumble form. Sprinkle on top of unbaked muffin and bake. :)
ps: How do you avoid overmixing your muffins, while still incorporating the dry+wet together? Thanks.

Hi Amelia, thank you for the great tip for the topping I will try that next time it sounds delicious.
To avoid over mixing I just try to add ingredients little by little and look at the texture a lot inbetween to see if it looks right. It really depends on the kind of recipe I am cooking at the time.

I luv blueberry muffins and they are really healthy too.
But now at the moment here it is expensive , they come in small bowls. So will wait for few months when they sell it here in abundence
