Vegetarian Chilli Con Carni ... (Fat Free)

If you like chilli con carni you are certain to love my vegetarian chilli con carni recipe!

It is packed with flavour and it is uses no oil and is fat free!

This dish tasted delicious and when you have finished eating it, you will feel like you have not missed out on meat because it will have tasted so good.

If you are vegetarian, on a diet or if you are a meat eater and you have not got meat in at the time then this recipe is for you. This chilli con carni recipe will leave you feeling pleasantly satisfied as it tastes wonderful !


Ingredients
1 Medium Onion (diced small)
1/2 Red Large Pepper (diced small)
1 Tin Flageolet Beans
1 flat mushroom (cut small)
1/2 Tin Cherry Tomatoes
1/2 tsp Paprika
1/4 tsp Cayenne Pepper
2 1/2 tsp Cumin Powder
2 Garlic Cloves (crushed chopped)
Tomato Puree
Pinch Parsley
Salt
Small Pinch Black Pepper



Note: ........You can fry your onions in olive oil if you like instead - it will still be just as healthy! Also you can use red kidney beans if it is your preference it will still be just as tasty!




Put a little water into your pan and cook your onions for approx 10 minutes and the water has dried out, add a little more water if necessary.


Add your 1/2 tin of cherry tomatoes with its juices and stir well, cook on a medium heat - cook for a few minutes. Add your parsley, 1/2 tsp cumin and your cayenne pepper.


Add you red peppers then add your garlic, if it starts to get too thick add a little water to loosen it up.




Now add another 1/2 tsp of your cumin powder. Keep cooking then add your mushrooms, then your paprika and stir well.



Rinse your beans and add them to your pan, stir well and simmer for a few minutes then add some tomato puree with a little more water and a tiny pinch of salt(optional) stir well and simmer for 5-10 minutes on low heat.



Serve with rice, bread or in a bowl as it is. We ate ours with some bulgar wheat - it tasted fantastic! Enjoy Jeenas Vegetarian Chilli Con Carni Recipe! :)
