This dish I created is a lovely dish that brings a touch of spice to fish and makes the perfect combination.
Once you cook this dish you will never forget it as it tastes so wonderful !
I have named this dish "Fish Mexicana" as it has a taste of "South America and Mexico".
I have formed this dish using fresh caught mackerel and fresh chili in a tomato base sauce, and have served it with my very own special rice.

Ingredients
2 Green Chili's - chopped
1 Red Chili - chopped
1 Red Pepper/Capsicum - diced
1 Green Pepper/Capsicum - diced
approx 1/2 Cup Creamed Tomatoes
2 Small Onions-finely chopped
Olive Oil
2 Whole Mackerel (gutted etc)
For the Chunky Sauce
First of all fry your onions for a few minutes, slightly mush your chili's in a mortar and pestle then add to your onions. Cook for a minute or two then add your peppers/capsicums and creamed tomato with a splash of water to loosen it up. Simmer for 10-20 minutes.
For the Fish
Make sure you have cut the head and tail off and that the fish is gutted(your fish monger will do this if you request it ). Now put 3 slits diagonally on each side of the mackerel. Cook them on a hot griddle/frying pan for a few minutes on either side - then put them on a tray with a splash of water straight into a hot oven(approx 200-220C) for 5-10 minutes until the fish is cooked.
..........that this is all that was left on the plate! :)

Jeena this dish looks amazing, I wish I too could of tasted it, damn ! Can I come to your place for tea ? ....My lips are watering and my tongue is hanging out ...looking at these lovely dishes.
