Aromatic Chicken Special

I made this today and from the beginning to the end of cooking this dish the aroma just filled the room !

When you taste this curry your mouth will be filled with explosions of flavour from the toasted seeds and the fragrance of the fresh ginger that was so delightful.

You must give Jeena's Aromatic Chicken recipe a try as it tasted very DELICIOUS!


For the toasted spice mix

2 tsp Coriander Seeds
2 tsp Cumin/Jeera Seeds
just under 1/4 tsp Black Mustard Seeds
2 Brown Cardamon Pods
4 Small Green Cardamon Pods

And the rest......

1 tsp Turmeric
1/4 tsp Ground Cumin
1/2 tsp Ground Coriander
1/32 tsp Garam Masala
Pinch Salt(optional)
Large Pinch Ground Black Pepper
Dried Methi/Fenugreek Leaves
Dried Coriander Leaves

2 Small Onions(sliced)
1 Medium Onion(chopped small)
2 Tomatoes(Peeled, chopped and blended)
8 Small Cloves Garlic(chopped small)
5-6 Inches Fresh Ginger(chopped small)
1 Green Chilli (de-seeded, choped small)
1 Red Chilli (de-seeded, chopped small)
2 Large Flat Mushrooms (Chunks)


Put your seeds into a small pan and toast them till they smoke a little and crackle (do nt over do it or they will burn easy). Put your seeds into a blender/mortar and pestle to grind - take your green and brown cardamon pods and peel the skins off - discard the outer skin and add the tiny seeds from the inside of them into your blender mix. Grind them.

Now blend together your garlic and ginger you may need to add a few drops of water to help loosen it but be sure not to add too much water or it will go to liquid.




Blend up your medium onion and fry it in some rapeseed oil. Keep stiring it.



Add your sliced onion and cook them until they start turning golden. Keep stiring.



Turn your heat down a little add your garlic/ginger paste and stir well. Cook for a few minutes.




Add your turmeric and stir well.




Turn down the heat, add your tomatoes chili's and 2 tsp of your ground toasted seed mix.
Pour a little oil in and keep stiring well.




Add your chicken stir well. Keep simmering.



Add you dried methi leaves with your 1/4 tsp ground cumin and 1/2 tsp ground coriander. Stir well.

Add a small drop of water to loosen it up (remember too much water turn curry into a stew so only add small amounts at a time). Cook for 5 minutes then add your salt and black pepper stir well then add garam masala . Keep stiring.



Add your mushrooms. Stir well add a little more oil if needed or water. Put your pan lid on and simmer for 5 minutes or so.



Add your dried coriander and simmer right down until leaves soak up the curry and soften.




Your Aromatic Chicken curry recipe is now ready.
