Chicken and Cauliflower Stew Recipe


This chicken recipe is a wonderful warming stew that is easy to cook.

It is a one pot recipe that tastes fantastic.

I simply use 2 spices and a little garlic with the vegetables in this chicken stew recipe, the delicious flavour soaks into the chicken breast so well, that it almost tastes like the chicken has been marinated.

My chicken stew recipe is also very healthy and only takes 20-25 minutes to cook, so why not give it a go and give your tummy a real warm rustic treat.





Ingredients for Jeenas Chicken and Cauliflower Stew Recipe..

2 Skinless Chicken Breast
1/2 Cauliflower (florets)
1 Thick Slice Fresh Fennel (diced)
1 Small Zucchini (chunks)
1 Small Onion (diced)
1/4 Red Pepper (chunks)
1/2 Yellow Pepper (chunks)
5-6 Small Carrots (chunks)
1 Garlic Clove (crushed)
1-2 Inch Fresh Ginger (grated)
1 tsp Turmeric
Salt and Pepper
Olive Oil
Water

'Note...I use a pressure cooker for this chicken recipe, you can use a standard pan to stew and simmer the chicken stew using the same method.

If you want to cook this recipe in the oven make sure you use the same method of frying the few ingredients and adding it to the bottom of your oven dish then layering the ingredients up in the same way.'





Getting started on Jeenas chicken and cauliflower stew recipe..


Take your pressure cooker drizzle some olive oil and gently fry the garlic, fresh ginger and turmeric for a 1-2 minutes stiring all the time.

Take straight off the heat lay the chicken breast on top of the garlic fry.



Cover with all your chopped vegetables.



Place the cauliflower florets on top of the chopped vegetables.



Add enough water so that you see it only just coming through the vegetables.

Secure your pressure cooker lid, bring to the boil then turn the heat as far down as possible and cook your chicken stew for 20-25 minutes.



Once cooked take your pan and place it under the cold water tap. Release the lid, season with salt and pepper.



Your chicken and cauliflower stew recipe is ready to eat.

Serve as it is or with bread.

I just wish i had a pressure cooker!!!! I'm not sure mine would turn out as nice in a pan to stew.

I also haven't had cauliflower in ages and ages! Will have to do something about that!

It's a great recipe. I'm cooking it for the second time today, without a pressure cooker. I use whatever veggies I have on hand and it turns out great.
