My oven baked chicken thigh recipe is so very easy to cook.
Cooking the chicken along side fresh vegetables gives the chicken the moisture it needs as it cooks in the hot oven.
The flavours in my chicken recipe are amazing and you will not be able to resist dipping your bread into the sauces in the oven tray, I even drizzle the sauce over my rice for extra flavour because it tastes so fantastic.
I use skinless and boneless chicken thighs for extra flavour and less fat from the skin, along side all of the vegetables and marinade this is one healthy meal that tastes fabulous and looks as colourful as it does delicious.








Ingredients for Jeenas Kitchen Easy Baked Chicken Thigh Recipe
4 Tomatoes (halved)
1 Sweet Red Peppers (chunks)
6-8 Carrots (chunks)
1 Onions (chunks)
6 Skinless and Boneless Chicken Thigh Pieces
For the Marinade
4-5 Tbsp Olive Oil
2 tsp Paprika ( I use Hungarian Paprika)
1/2 tsp Dried Thyme
1/2 tsp Kalonji Seeds
1 tsp All Seasoning
1/2 tsp Dried Jalapenos or Chilli Powder
1 Tbsp Lemon Juice
1/2 tsp Dried Parsely

How to make Jeenas Kitchen Chicken Thigh Recipes
Place all vegetables into a large oven tray.
Place all vegetables into a large oven tray.


Place the chicken in between all the vegetables.

Mix together all marinade ingredients.


Starting with the chicken first take a spoon and drizzle the marinade over the chicken and vegetables.


Cover with tin foil.
Place into a hot oven at 180C for 25-30 minutes, remover foil and cook for a further 5-7 minutes or until cooked.

Once cooked you can serve on separate plates or in one large dish.

The darker and the closer to the bone, the sweeter the meat tends to be. Your dish is so tasty, it will "bestill" even hungry man's hunger pangs!
Oh yum Jeena! I have all of the stuff for this {minus 1-2 of the exact seasonings... but that probably can't be helped at this point!} I might have to try this later in the week!
