Jeenas Kitchen Food Blog Event - Fishing Trip



Ahoy ahoy! All Hands on Deck!
Come Fishing with Jeenas Kitchen!




Yes! This event is all about fish and seafood.
Come on board and get cooking your delicious fish and seafood recipes that you love the most, or why not experiment with some new fish and seafood ideas?

Fish and seafood can be very healthy to eat, some fish contain omega oils which are essential for good health.

You can not have a better reason than this to cook some delicious fish and seafood recipes for this event.

You only need to follow a few steps to join this event

1. No other meats can be used in this event other than fish or seafood - no red meats/poultry/game allowed.

2. Send an email to jeenaskitchenevents (at) googlemail (dot) com with the following;

a) Your name and name of blog

b) Name of recipe and URL of recipe

4. All entries must be sent in before the finishing date 5th September. And remember that you do not need a blog to enter this event.

Vegetable Pasta With Coley

This pasta recipe is easy and quick to cook, it tastes delicious and is very healthy too. Why not give this lovely light meal a go?



Ingredients

4-5 Medium Carrots (cut into sticks)
Handful Fresh Green Peas
1/2 Cauliflower (cut into florets)
Pasta Twirls
Coley Fish (or white other fish)
Sprinkle Dried Parsley
Lemon Juice (optional)
Olive Oil (optional)
Ground Black Pepper



Steam the fish and vegetables in a steamer.

Cook the pasta in some lightly salted water.

Once ready drain the pasta and mix in the fish and vegetables.

Sprinkle on some parsley, black pepper and squeeze on some lemon juice, put onto a plate and drizzle over some olive oil - dust with parmisan cheese also if desired.

Fish mexicana recipe


Today Chef has been very busy in Jeenas Kitchen.

Chef created this dish that adds a touch of spice to fish.

This fish recipe uses fresh caught mackerel and fresh chilli in a tomato base sauce.



Ingredients


2 Green chilis (chopped)

1 Red chili (chopped)

1 Red pepper/capsicum (diced)

1 Green pepper/capsicum (diced)

1/2 Cup creamed tomatoes

2 Small onions-finely chopped

Olive Oil

2 Whole mackerel (gutted etc)



For the Chunky Sauce


Fry the onions for a few minutes, mush the chilli in a mortar and pestle then add to the onions.

Cook for a minute or two then add the peppers/capsicums and creamed tomato with a splash of water to loosen it up.

Add salt and pepper to season.

Simmer for 10-20 minutes.



How to cook the fish

Make sure you have cut the head and tail off and that the fish is gutted(your fish monger will do this if you request it ).

Put 3 slits diagonally on each side of the mackerel.

Cook them on a hot griddle/frying pan for a few minutes on either side - then put the fish on to an oven tray with a splash of water straight into a hot oven 220C for 10-15 minutes until the fish is cooked through to the bone.




Chef served thsi fish recipe with mushroom pea rice and the combination tasted delicious.

So delicious infact.
