Sweet Gluten Free Pastry Recipe


My sweet gluten free pastry recipe is a lovely crumbly biscuit recipe.

You can use it to make individual biscuits or for other pastry recipes.

Check out my fig rolls recipe which uses my sweet gluten free pastry.





Ingredients for Sweet Gluten Free Pastry Recipe Recipe
3oz Sunflower margarine
1oz Fine cornmeal flour (fine polenta)
1oz Light brown muscovado sugar
4oz Rice flour
1/2 tsp Vanilla extract
1/2 tsp Xanthan gum
1/2 Tbsp Rapseseed oil or vegetable oil
1/2 tsp Baking powder
2 heaped tsp Cornflour (corn starch)
3oz ground almonds


How to make Gluten Free Sweet Pastry

Place all ingredients except sugar and butter into a mixer and mix well.

Add sugar and margarine and blend into a crumbly texture, you can do this by rubbing the mixture together using your fingers tips alternatively.

Add very tiny amounts of water and pulsate the blender little by little until it all clumps together.

Do not pour water in or use large amounts of water or it will turn into a cake batter not a pastry dough.



Roll pastry into a dough ball and cover with plastic wrap and place into the fridge for 30 minutes-2 hours.



Roll out and use for biscuits cookies and pastry.

Because only a small amount of xanthan gum is used in this recipe it may be necessary to use your finger tips to help with the rolling out process.

How much pastry does this make and what is Xanthan gum? If I was not looking to make this gluten-free, what would I use instead of this?

Hi Jenny,

This pastry is for people with celiac disease that is why xanthan gum is needed or else the pastry will crumble as it contains no gluten.

Generally shortcrust pastry is half the amount of fat to flour and if you want it to be sweet add a spoonful of sugar.

Could you tell me what you are making with the pastry?

Thanks, I haven't decided yet! I was just curious to know as I'd like to try making pastry without using normal plain white flour. I don't have an intolerence to gluten but interested in ways to cut down intake.

I have bookmarked this one to try out soon :-)

This, and the newtons recipe, looks wonderful! I would need to leave out the almonds (nut allergy in the house, in addition to wheat and eggs), think it will work if I just leave them out?

As we need to exclude gluten, eggs, sugar and butter/margarine would like your advice on what we can substitute for Sunflower Oil and Muscovado Sugar in your Sweet Gluten Free Pastry Recipe.
