Sweet Gluten Free Pastry Recipe


My sweet gluten free pastry recipe is a lovely crumbly biscuit recipe.

You can use it to make individual biscuits or for other pastry recipes.

Ingredients for Sweet Gluten Free Pastry Recipe Recipe
3oz Sunflower margarine
1oz Fine cornmeal flour (fine polenta)
1oz Light brown muscovado sugar
4oz Rice flour
1/2 tsp Vanilla extract
1/2 tsp Xanthan gum
1/2 Tbsp Rapseseed oil or vegetable oil
1/2 tsp Baking powder
2 heaped tsp Cornflour (corn starch)
3oz ground almonds


How to make Gluten Free Sweet Pastry

Place all ingredients except sugar and butter into a mixer and mix well.

Add sugar and margarine and blend into a crumbly texture, you can do this by rubbing the mixture together using your fingers tips alternatively.

Add very tiny amounts of water and pulsate the blender little by little until it all clumps together.

Do not pour water in or use large amounts of water or it will turn into a cake batter not a pastry dough.



Roll pastry into a dough ball and cover with plastic wrap and place into the fridge for 30 minutes-2 hours.



Roll out and use for biscuits cookies and pastry.

Because only a small amount of xanthan gum is used in this recipe it may be necessary to use your finger tips to help with the rolling out process.

Gluten Free Pastry Recipe for Sweet Biscuits


How to make Gluten Free Pastry for Sweet Biscuits and More.


This is a pastry recipe that I love the taste of. It makes fabulous biscuits, tarts and other sweet pastry recipes.

I use a blend of rice flour and dark sugars to produce a delicious crunchy tasty cooked pastry.

You can use this pastry in many dishes and recipes in replacement of wheat pastry.



Ingredients for Chef Jeenas Gluten Free Sweet Pastry Recipe
1 +1/2 Cup Rice Flour (I used mixed white and brown)
1/2 Cup Gluten Free Self Raising Flour
1/2 tsp Baking Powder
1/2 Cup Molasses Sugar (dark brown sugar)
1/4 Cup Sunflower Spread
1 tsp Rose Water
1 tsp Vanilla essence
Cold Water (to mix)
How to bake gluten free pastry


In a mixing bowl stir together rice flour, baking powder and self raising flour.



Place half of the dry flour mixture into a blender and blend together with the molasses sugar. Molasses sugar is quite sticky and clumps together so a blender will grind it down. If you use brown sugar you can rub together with your fingers.



Place your sugar/flour mixture back into the bowl.



Add the sunflower spread and rub together with your fingers.


Your gluten free pastry mixture should now have a fine bread crumb texture.




If you clump the pastry mixture together in your hand it should hold together then crumble away.



Little by little add cold water to the gluten free pastry mixture until it forms a stiff dough. Do not add too much water at a time, a little at a time with stiring in between will make sure you get the perfect consistency.



Your gluten free sweet pastry recipe is now ready to use. Roll into a ball and place on to a floured board.

This pastry is best cooked at 180C. The time it is cooked for depends on which food recipe you want to cook.

How to Make Gluten Free Pastry (Buckwheat pastry recipe)


Here is how to make gluten free pastry in Jeenas Kitchen.

When we think about eating pastry it is always wheat pastry that comes to mind, because wheat flour contains gluten it means it is easy to stretch and bind and use for baking recipes but for people who can not tolerate gluten in their diets there are some alternatives to using wheat flour in baking pastry.

Using other flours than wheat to bake pastry is a very different experience, the texture, feel, taste and whole look of gluten free pastry is so very different to using wheat, different it may be but is delicious.

This gluten free buckwheat pastry recipe uses a binder called xanthan gum with out the xanthan gum the buckwheat flour would not roll out and stretch, so it is necessary to use xanthan gum to achieve a pastry from the buckwheat flour.

Buckwheat flour is perfect for baking savoury dishes like pies, pasties, flan, biscuits.....the list goes on!

Buckwheat flour has lots of health benefits including being high in fibre and containing all 8 amino acids.

I can eat wheat/gluten but I like using gluten free buckwheat flour because
it has a real wholesome rustic nutty taste and is very nutritious.




Ingredients

3 Cups Buckwheat Flour
4 Tbsp Rapeseed Oil
3 Tbsp Olive Oil
1 Level tsp Xanthan Gum
1/2 tsp Salt
Cold Water


(For a gluten free vegan buckwheat pastry using margarine...
Use the same method rubbing wet ingredients into the flours with
150g buckwheat flour, 40g rice flour, 1/2 tsp salt, 1 tsp xanthan gun, 1/2 Tbsp cider vinegar, 1 Tbsp rice bran oil, 50g margarine.)

How to make Gluten Free Pastry..


In a bowl mix well your buckwheat flour with your xanthan gum and salt.




Add your olive and rapeseed oil and rub together with your fingers.

Your pastry mix will not clump together like when using wheat and butter (shortcrust pastry).



It should stick together in your hand then crumble away.



Carefully add cold water to your gluten free pastry mixture.

Only add a little at a time keep mixing well before adding more water so that you can see when you do not need to add any more.




When the gluten free pastry mixture is clumping together and becoming a little sticky then your buckwheat pastry is ready.



Bring together with your hands to form a ball.




Roll out and use as desired.

You can bake pies, pasties, flans, quiches...
