Coconut vegetable rice recipe


Chef has prepared a tasty coconut vegetable rice recipe.

This is a healthy and delicious rice dish that can be cooked as a side dish eaten alone with bread.

There is a good combination of vegetables in the rice so that when you are eating it one vegetable does not stand out over another vegetable - a perfect blend.





Ingredients for coconut vegetable rice

1 medium Onion (diced)
1 Sweet red pepper (diced)
5 Tbsp Frozen petite pois peas
1 large Flat mushroom (diced)
1 tsp Chef Jeenas Mild curry powder
1 tsp salt
150ml Light coconut milk
250ml Cold water
Rice bran oil
200ml Cold water

Rice

10oz Basmati rice
Cold water to soak



How to make a vegetable rice recipe




Soak the rice in water for 30 minutes.

Gently fry the onions and pepper until it starts to just soften.



Stir in the mushrooms.




Stir in the curry powder.



Stir in the peas and switch off the heat.



Drain the rice then add to the vegetables stir well.



Mix 150ml of light coconut milk with 250ml of cold water and 1 teaspoon of salt.

Pour the coconut milk mixture into the rice stir well.



Place a lid on and bring to the boil then turn down to the lowest heat for 12 minutes.

Do not remove the lid.



After 12 minutes lift the lid briefly stir the rice only a little, pour in the 200ml of cold water place the lid straight back on.

Turn the heat up on high for 10 seconds then back down to the lowest heat for 13 minutes being sure not to remove the lid whilst cooking.



After 13 minutes turn off the heat remove the lid and fluff with a fork.

Serve the rice directly on to the plate or lightly spoon some rice into a small bowl place a plate on top of the small bowl and turn upside down.

Jeena, if I may ask - how do you know so much of Indian cooking? Did you learn it or do you have Indian friends, or an Indian backgrond somewhere?? Its incredible to see someone from outside India be so involved in Indian cooking

This rice recipe looks really good. I am a fan of using brown rice - how do you think it would do with brown basmati rice?

hi jeena!
i made this yesterday and the rice turned out perfectly!! wonderful recipe. today i am trying to another recipe with your method and i used 1.5 times the rice measurement and accordingly 1.5 times the water also. I wanted to know how much more time i should be putting it to cook?
