Chef has baked some delicious thin and crispy onion crackers that can be served as a snack with cheese, dips and hummus.

This is a vegan recipe so it contains no eggs or dairy in the ingredients.

With a combination of wholewheat flour and cornmeal this cracker is one wholesome and crunchy treat to eat.

These crispy onion crackers are healthy, easy to make and great to have on a budget.

Just follow the step-by-step pictures below and get started baking these delicious snacks.

Ingredients for onion crackers

Dry ingredients

2 + 1/2 oz Course cornmeal (polenta)
5 oz Extra strong wholemeal flour
1/2 tsp Bicarbonate of soda
1/2 tsp Salt
1 Tbsp Light brown muscovado sugar
1 oz Plain flour
1/4 tsp Baking powder

Wet ingredients

8 Tbsp Water
1 Tbsp Cider vinegar

How to make tin and crispy onion crackers

Mix all of the dry ingredients in a large mixing bowl.

Add the wet ingredients and mix the cracker mixture together to form a dough.

Add the water a few spoonfuls at a time to be sure the amount is correct, mix well between adding each one.

You can dip your fingers in cold water to help bring the dough together rather than add more water if needed.

Roll the dough into individual little balls.

Use a rolling pin to roll out the ball into a thin round.

Sprinkle the dried onions on top of the cracker dough then roll the dried onions into the dough a second time.

If you do not roll the dried onions into the dough the onions will simply burn in the oven.

Use a cookie cutter to make a perfect shape then put the remainder of the cracker dough to the side.

Lightly dust two oven trays with plain flour, do not grease the oven trays.

Place into a hot oven at gas mark 5 for 10-12 minutes or until golden.

If one tray must go onto a top shelf make sure that the trays are swapped half way through cooking to prevent burning.

Remember when cooking these crackers after 10 minutes every single minute counts so stay by the oven to be ready to take the crackers out of the oven.

Cool on a wire rack.

Once the crackers are ready place all of the scraps of cracker dough onto an oven tray.

Cook just as the crackers only when the scraps start to turn golden switch off the oven but leave the tray inside for 10 minutes with the door only just open.

This will make the scraps even crispier, this method can be used for the round onions crackers too but it would make it a much bigger job, it is up to you.
