Vegetable Curry Recipe

Here is my vegetable curry recipe.

It was so tasty we ate it all up and left hardly a speck in the pan.

It was very aromatic with the freshly ground spices and the vegetables give it lots of delicious flavour, my vegetable curry is easy to make, healthy to eat and really tasty.

Ingredients..
1 Onion (sliced)
1 Small Onion (blended)
2 Tomatoes (peeled and chopped)
4-5 Small Spring Onions (chopped)
1/2 Cup Fresh Peas
3 Savoy Cabbage Leaves
Handful Mushrooms (chopped)
Olive Oil
Water
2-3 Inch Fresh Ginger
2-3 Cloves Garlic
Spices..
Pinch Dried Chilli Seeds
1 tsp Turmeric
1 tsp Cumin Seeds
1 tsp Coriander Seeds
1/2 Stick Cinnamon
Pinch Dried Curry Leaves
1/2 tsp Paprika
1 tsp Garam Masala
Pinch Salt (optional)



Getting Started.....

First put your coriander and cumin seeds into a little pan and gently heat them up until you can smell the aroma. Quickly take them off the heat and grind to a powder with a mortar and pestle or electric grinder. Also grind your garlic and ginger to a paste with a drop of water. Now place your cabbage and peas in a pan of hot water and simmer.


Drizzle a little oil in a large pan and add your onions. Cook until golden then add your garlic/ginger paste, tomatoes and spring onions. stir well.



Now add your dried chilli seeds, turmeric and a drizzle of oil. Stir well. Add your ground coriander/cumin seeds, stir well and simmer.



Drain your peas and cabbage, cut your cabbage into pieces and leave to the side. Add a drizzle of water to your curry, careful not to add to much just enough to loosen the sauce. Add your Cinnamon and stir.



Add your cabbage and peas, stir well. Add your curry leaves and paprika then your mushrooms with a little more oil.



Simmer and keep stiring well in between. Add salt if required, cook until mushrooms are cooked.



Take out your Cinnamon stick and add some fresh coriander leaves, stir.



Your Vegetable Curry is ready to serve.

Looks delicious, we make similar version. I sometimes add lil yogurt or cream. It adds a rich creamy texture and also taste.

Totally yummy! I just read that turmeric actually clears out brain plaque. While this sort of grossed me out, it kind of made me obsessed with turmeric, too!

Thanks for the recipe,Jeena! I needed a quick and easy meal that stays in my diet, and this was perfect. I even had all the ingredients on hand!

One thing I noticed, you don't mention the garam masala in the recipe, but it is in the list. I just put it in with the cumin & stuff, but thought I'd let you know.
