Eggless Carrot Cake .... Fat Free!

Here is Chef Jeenas dairy free carrot cake recipe - it tastes delicious.

There is not an ounce of fat in this recipe and it uses no eggs or milk.

It is moist and the small amount of fresh ginger gives it a smooth spicy tingle that compliments the other ingredients so very well, this carrot cake recipe is a real healthy treat.

Ingredients for eggless and fat free cake recipe

3-4 Small/Medium Carrots (grated)
1 Small Inch Fresh Ginger (finely grated)
5 Heaped Tbsp Wholewheat Flour
2 Heaped Tbsp Molasses Sugar (or darkest sugar you have)
2 Tbsp Honey (I used eucalyptus honey for its toffee flavour)
1 tsp Honey (I used yellow French sunflower honey)
1/2 tsp Baking Powder
2 Mandarins

Note... You can use which ever honey type that you like best, also instead of mandarin you can use satsuma or any small oranges.

How to make an egg and fat free carrot cake

Place grated carrots, ginger, molasses sugar and honey into a bowl and mix well.

Add wholewheat flour and baking powder, mix well.

Peel mandarins take out the seeds along with the skins from either side of each segment.

You should be left with the fleshy part of the mandarin - do not worry if bits of skin get left just try to get the tough parts off.

Blend up the madnarin segments and pour to your carrot cake mixture.

Mix well and pour into a greased and floured baking tin.

Place into a hot oven at approximately 170C for 20 -25 minutes.

Once coked leave for 10 minutes then place carrot cake onto a cooling rack and leave upside down to cool fully.

Once cooled place cake upside down onto a plate and decorate with mandarin segments and dust all over with powdered sugar.

Jeena, cake looks yummy as usual. I love the way you cook health consciously. I never heard about eucalyptus honey and sunflower honey. will look for it in the store. Thanks for sharing .

Chef Jeena said...

Hi Kribha thanks for your kind words, yes here in the UK we have these honeys I am sure if you look in your health food shops or even your supermarkets you will find lots of varieties.

I also have heather plant honey and manuka also :) The flavours really do taste different depending which plant the bees have taken the pollen from. I think it is amazing how honey is made for us from the bees. :)

Thanks for this fabulous recipe!

One of my friends cannot have eggs, milk, or sugar. I found your blog using a "no eggs cake" google search and used your Carrot Cake for her birthday (substituting the bit of sugar in it). It was a big hit, most people even had seconds!

I put a bit of fancy honey and grated some fresh nutmeg on the top and that worked really well.

Chef Jeena said...

Hi Corrie, I am happy that you and your friends loved the carrot cake recipe. The honey and nutmeg sounds great. We always have seconds too.

Do bookmark jeenaskitchen.blogspot.com as I update very often with dairy and egg free recipes.

Hi Jeena,

Love the egg and dairy carrot cake recipe as I cant have animal fats.
Is there a topping recipe that can be used with the carrot cake as I have a bit of a sweet tooth.

Chef Jeena said...

Hi Mark,

I will be posting a vegan butter cream recipe very soon which is animal free.

You could dust the top of the cake with powdered sugar or drizzle icing over the top.

Keep logging on to my blog because I have lots more animal free recipes coming very soon.

Jeena. :-)

Hi Jeena,

Thanks for replying so soon, tried with non-dairy orange butter icing. really nice. Thanks for your suggestions of icing.
Hope theres more animal fat free recipes on the way.
I really appreciate these recipies as I have been unable before now to enjoy chocolate cake. Never knew about carob.
Your suggestion with the soya alternative or the pure for the cheese cake.
This is the best site i have found for my condition where i have to avoid animal fats. Thanks again for all your hard work.

Ps( in last reply i meant eggless carrot cake)

Hi Chef Jeena! What an intriguing recipe. The touch of Eucalyptus Honey is just perfect. I haven't bought it in ages. (I adore heather honey too:) Thanks for the reminder.

I was wondering whether you would mind if I "borrowed" your Eggless Carrot Cake picture to include in a post I'm doing for National Carrot Cake Day here in the states, Feb. 3. I would of course include a link back to your deliciously lovely blog. Many visitors are so diet conscience this time of year and I think they will feel the same as I, simply exquisite.

Thanks so much for sharing...
