Vegetable Hotpot with Dumplings

I really got a taste for some stew today so I made my simple vegetable hotpot. It is quick, easy and delicious. You don't always need meat to enjoy a nice hotpot! Leeks really give this vegetable hotpot the flavour. I ate mine mine with HP Sauce and it was so tasty! Sometimes it's nice to have something simple in a dish that fills you up and makes you smile - this recipe is it! :)




2 Large Carrots(Sliced)

Half Large Leek(sliced)
4-5 Small Potatoe's(diced small)
8 Tbsp Self Raising Flour
40-50g Butter
small Pinch Salt
Cold Water
Gravy Granules(I used Bisto Original)
Olive oil


Fry your leeks in some olive oil for about a minute.





Add your carrots and potatoe's





Pour in enough water to boil your vegetables for 15 minutes until they soften.





Meanwhile make your dumplings. Put 5 Tbsp of self raising flour into a bowl with your butter and small pinch of salt.




Rub together with your fingers into a coarse crumb like texture.





Add 3 more Tbsp of self raising flour and 1/4 tsp of Bicarbonate of soda.




Stir together lightly but well.






Add cold water gradually, very lightly pull the mixture together with a spoon to form a fluffy dough.


Gently bring together with hands - you do not need to knead this mixture. Now leave to the side for a moment.


By now your vegetables should be quite soft so add your favourite gravy granules to thicken it a little, stir well.



Take pieces of your dumpling dough and roll lightly into balls and place into your stew- cover with a lid and simmer on a medium heat for about 5-7 minutes.





Your dumplings will almost triple in size. Take a spoon and gentle roll them over - simmer again for another 5-7 minutes.






They should take approx 15-20 minutes to cook.




Serve as it is or with black pepper, Worcester sauce or like me HP sauce! It is also nice with a slice of bread. Enjoy!
