Gluten Free and Vegan Chocolate Chip Cookie Recipe

These cookies were so tasty that I had to quickly eat one before everybody else had ate the entire plate full.

Not only are my chocolate chip cookies a gluten free recipe they are a vegan recipe also.

Gluten free baking can sometimes mean people use a lot of starches and additives, in this recipe I use only natural ingredients as I did not find it necessary to use additives or starchy flours.

The cookies taste fantastic.

Sometimes I like a chewy cookie and sometimes I like a biscuit cookie these chocolate chip cookies are very soft in texture and melt in your mouth along side the chocolate.

Instead of using chocolate chips I used a carob chocolate bar that I chopped into chunks, you can use cocoa chocolate or chocolate chips of your choice.

Ingredients for Gluten Free and Vegan Chocolate Chip Cookie Recipe

4oz Rice Flour
2oz Chopped Carob/Cocoa Chocolate
1oz Light Brown Sugar
2oz Sunflower Margarine
2 Large Tbsp Brown Rice Syrup
1oz Ground Almonds
1 tsp Baking Powder
1/2 tsp Bi Carbonate of Soda
1 +1/2 tsp Vanilla Essence
4 Tbsp Soya Milk


How to make Jeenas Kitchen Gluten Free Vegan Chocolate Chip Cookies


Cream together the margarine and sugar.



Add the rest of the ingredients and mix well.



Drop spoonfuls onto a greased and floured baking tray.


Lightly flatten the mixture a little.




Place into a hot oven at 180C for 10 minutes.




Remove from the oven and flatten the cookies using the back of a fork.




Place back into the oven for another 5 minutes or until golden.



Remove chocolate chip cookies from the baking tray using a spatula straight away.



Leave to cool on a rack.

Jeena these look divine. Sounds like your house is similar to mine as the cookies never last long. Chocolate chip cookies are always a favorite.

These are wonderful! Such a great texture. I used carob chips and substituted coconut oil for the fat, and unsweetened coconut flakes for the almonds, to make them vegan and tree nut free for a school bake sale. "Coconut carob chip cookies." They were super sweet and I'm going to experiment next with using all syrups or dates or something to make them sugar free too. Thanks for a great recipe. Oh, I also added a little Xanthan gum and cider vinegar to help them bind and rise, but I have to try without those habitual additions :-)
