Strawberry Gateau Recipe


A photo step-by-step cooking guide for my Strawberry Gateau recipe.

Before I start on this post, I must make you aware that this strawberry gateau is totally addictive ! ..So for this Fathers Day, I wanted to cook a nice dessert for my wonderful husband.

All my family ate this delicious "strawberry gateau recipe" up in one go and there was not a crumb or smear of cream left on the plate...it was so very tasty.

I use thick clotted cream and freshly sliced strawberries between each layer of the gateau; then sprinkle it with "praline sugared almonds" that I cooked the same day.

The scent of the gateau mixture is like a fragrance of a tasty gourmet strawberry ice cream, the taste of my strawberry gateau recipe is amazing as it was so very moist and will melt in the mouth; it is of a soft fluffy texture and the taste is wonderful, the flavours and textures are such a fantastic combination and finished with praline sugared almonds made it very divine.



Ingredients for Strawberry Gateau Recipe

280-300g Fresh Strawberries
4oz Caster Sugar
4oz Sunflower Margarine
6oz Self Raising Flour
1 Heaped Tbsp Fine Corn Flour (fine corn meal)
1 tsp Vanilla Essence
1 Medium Egg
1oz Ground Almonds
Fresh Strawberries (for gateau layers)
Clotted Cream (or double cream whipped firm)
Powdered Sugar (to dust)
Sugared Praline Almonds (for garnish)

How to make my step-by-step Strawberry Gateau Recipe


Place the caster sugar and margarine into a bowl and mix well.

Add the egg and vanilla, mix well.



Add a heaped tablespoon of corn meal flour and 1 tablespoon of ground almonds.

Mix well.




In a bowl take the 280-300g of fresh strawberries and mash with a fork.



Add the mashed strawberries and self raising flour, mix thoroughly.



You will be left with a thick cake batter.

This gateau mixture has a delicious scent of strawberry ice cream.



Grease and flour a flat oven tin that is slightly deep. Carefully drop a spoonful at a time onto the oven tray. Do this all around the oven tray.



Carefully spread the gateau mixture towards the edges, make sure it is evenly spread over the tray.



Place into a hot oven at 180C for 12-13 minutes on the middle shelf of the oven.

Do not open the oven until the gateau mixture has been in the oven for at least 10 minutes.



Once cooked take a flat spatula and carefully loosen the cooked gateau mixture from the tray.




Place a cooling rack on top of the cooked gateau mixture.

Carefully turn it out.




Cut the gateau into four sections.

You can slice the edges off the gateau or leave it as it is for a more rustic look.



Spread cream on one slice, do not spread fully to the edge of the gateau slice.

Place sliced strawberries on top of the cream.



Repeat this three times in layers.



After finishing each slice carefully place sliced strawberries between the gateau on every corner of the slice. This help support the strawberry gateau.



Dust with powdered sugar, cover a chill in the fridge for at least 30 minutes.


This gives the cream chance to set again.



Slice the strawberry gateau into squares, dust with more powdered sugar and sprinkle with praline sugared almonds you can also add a few sliced fresh strawberries to the plate for garnish.

indulgent...
