Fat free parkin recipe (eggless)


Chef Jeenas parkin recipe is not only fat free and egg free, it is rich in iron and B vitamins.

You won't have to worry about putting on the pounds eating some of Chefs fat free Parkin cake.

This delicious cake is moist and has a real treacle flavour, it can be eaten as it is in slices or even spread lightly with a little butter/margarine to be extra indulgent.

There are many different ways of making this traditional cake - this is Chefs fat free Parkin recipe.





Ingredients for parkin cake recipe

3 Tbsp Light Brown Sugar
3 Tbsp Molasses
1 Inch Fresh Ginger
10 Pitted Dates (chopped small)
1 tsp Buckwheat Flour (optional)
1 Tbsp Honey
3 Small Tbsp Sultanas
6 Heaped Tbsp Self Raising Flour
1/2 Tbsp Sweet Spice Mix
1/2 Cup Fat Free Milk or Milk Alternative
1/4 Cup Fat Free Milk or Milk Alternative
2 Tbsp Light Brown Sugar
1/2 Cup Ground Oats

How to make fat free parkin cake


In a bowl place 3 Tbsp of brown sugar - grate and add the fresh ginger and molasses - mix well.



Add dates, buckwheat flour (optional), honey, sultanas, self raising flour and sweet mixed spice

. Mix well.




Add 3 Tbsp light brown sugar and ground oats, mix well.



Add 1/2 cup of milk - mix well.



Once mixed add 1/4 cup of milk and mix well again.



Grease and flour a cake tin or use a paper oven case, pour in parkin cake mixture and place into a hot oven at 180C for 30-35 minutes.



Check if the cake is cooked by inserting a skewer through the middle of the cake if it comes out clean it is cooked.

Leave to cool for 10-15 minutes before you take the parkin cake out of the case.

Leave it to cool on a wire rack.

hey Jeena, surprise, thrs no chocolate in it and it still looks nice , brown n delicious. Ginger and molases are a gud combination and they do work for cakes too , i like your recipe looks gud n delicious

This is a lovely recipe Jeena..sure has a lot of good stuff in it...i've never tried anything with Molasses, so maybe this time I'll give it a shot:)
