Sausage Extravaganza

I made this for our dinner today and both my hubby and me loved it. Sausage's don't always have to be about a greasy fry up or bangers and mash! If you love sausages you will love this recipe! The broccoli just went so lovely with this dish(if you can't get broccoli spears just use your normal broccoli). Give it a try it tasted great! :)


Ingredients
4-5 Beef Sausages
Penne Pasta
2 Small Onions(sliced)
1 Sweet Red Pointed Pepper/Capsicum(deseeded + chopped)
2 Hand fulls Purple Broccoli Spears
Sprinkle Dried Parsley
1-2 Large Garlic Cloves(crushed)
Few Small Drops Lemon Juice
Olive Oil
Grated Parmesan Cheese
1 Tomato(Peeled and chopped)
Sprinkle Black Pepper





First of all get cooking your sausages in some olive oil and cook your broccoli in some water with a little salt(optional). Get your pasta on the go once your sausages have been on 5 minutes or so.



Cook your onions in some olive oil for 5 minutes. On a medium heat add your pepper then your garlic. stir well and add your tomato with some parsley and lemon juice.



Once cooked add a few teaspoons(or more if you like) of grated Parmesan cheese. Stir it well into your cooked pasta.



Slice your sausages and add to your pasta stir well.Always make sure your sausages are cooked through and hot in the middle.




Place your broccoli spears on top and sprinkle with pepper. Enjoy Jeena's Sausage Extravaganza! :)

I recently got introduced to sausages, had some samples of chicken sausages in a store, now hooked on to it.
This is a nice way to zest up the pasta.
Is that purple broccoli spears same as rapini(broccoli rabbe)?

Hey Manjula Iam not sure what rapini or broccoli rabbe is? I usually use the broccoli that has a short fat stump for a stalk with a great big green tree on top. I don't normally buy the purple speared type so I'm not sure. It really did taste great so I will will be getting the purple one again! Why don't you have a go Manjula chicken sausages sound great I don't think we get chicken ones here. :)
