Healthy Carrot Cake ( Fat free cake recipe)


This carrot cake recipe is healthy and delicious.

It contains no fat, uses molasses sugar and uses wholewheat flour.

This carrot cake is very spongy and moist and will keep fresh in a sealed tub or wrapped in plastic wrap/foil.

Ingredients for healthy carrot cake recipe

4 Tbsp Wholewheat Flour
1/2 tsp bicarbonate soda
2 1/2 Tbsp Dark Molasses sugar
1 1/2 large Carrots
2 large Tbsp Honey
1 large tsp carob powder
1/2 tsp cinnamon(optional)
1/4 tsp nutmeg
1 egg


How to make a healthy carrot cake


Place sugar into a bowl.



Add grated carrots and mix well.



Add honey.



Mix well.



Sieve all dry ingredients - keep your left over wheat bran from the flour.





Mix well




Whisk egg.



Add the egg to your carrot cake mixture.




Mix well then add the left over wheat bran.



Mix well.




Pour carrot cake mixture into a greased and floured cake dish.




Cook in a hot oven at 150C for approx 30 minutes.

Gently press the top of your cake if it is spongy it will be ready - or you can use a thin skewer to check if the cake is cooked.





Leave carrot cake to cool in the original dish or it will break when you take it out.



Decorate the top with flaked almonds, sultanas and dates.



Dust the top with powdered sugar for decoration.

Hey Meera :) I'm glad you like this recipe it was really delicious. Carob powder is a cocoa powder substitute, it is caffine free it tastes a little like chocolate but also has its own unique flavour......I am sure that cocoa powder may go just as well in this recipe - especially as it contains cinnamon with gives it real spicy kick....Hope this helps Meera :)

Jeena - I've heard a lot of carrot cakes, but never either had one nor baked one, coz I dont like carrots all that much. But your cakes looks very lovely. I must make it.

Mine didn't set right i left it in the oven for 50 minutes but it wouldn't go firm. It was firm on the outside but gooey on the inside. The mixture tastes great it's just more of a moose than a cake. Have i put too much treacle in?

Hi Billy,

What size baking pan did you use? If you use a deep baking pan to bake a cake then the oven times and heat need changing. If you pour the cake batter into a wider baking tin then it will cook better.

Also Did you add enough flour? Maybe add an extra tablespoon of flour to the mix and a little less treacle. Also the extra moisture could be coming from too many carrots, try using a little less carrot.

Also when a good tip is when you bake a cake is to never open the oven door until the cake has been cooking for at least 20-25 minutes as this can change how the cake cooks and looks.

Hi annonymous, yes this recipe only requies 4 tablespoons of flour. I use large tablespoons, if your measures are quite small then use 4 heaped tablespoons of flour.

Hi there, you can use cocoa powder instead of carob powder.


If you can't use molasses sugar brown sugar will work as good.

You could substitute the sugar if you like but it depends on what you use to how the texture will be.

Hi, great recipe! I have just made this and, like someone else mentioned, it has turned out really gooey and soft inside. I cooked it for longer than you said. However I made individual cupcakes out of it in little muffin paper things, so maybe that's why? It still tastes great, but is just really gooey.

It works really well topped with lemon butter icing - although that does make it a bit more naughty! And I put loads of sultanas in the mix too.
